Chalet Cheese Co-op founded by five dairy farmers in 1885, continues to flourish as a cooperative, owned by its 16 farms who are the sole suppliers of the milk.  All of the patrons are located right here in Green County. Chalet continues to place emphasis on traditional workmanship methods and quality.  Chalet Cheese is the only producer of Limburger in the United States and is right in the heart of Green County.

New at Chalet is our announcement of the promotion of Master Cheesemaker Jamie Fahrney to Plant Operations Manager as well as the arrival of Michael Hlubek as Plant Business Manager effective September 1st.  The change at Chalet Cheese follows the decision of long-time Plant Manager, Myron Olson, to retire effective August 31.

Jamie Fahrney joined Chalet Cheese Co-op in 1978, earning his cheesemaker license in 1985 under the watchful eye of legendary cheesemaker Albert Deppeler.  In 2002 Jamie earned the title of Master Cheesemaker in both Brick and Swiss. Fahrney is also an award winning Master Cheesemaker, achieving numerous awards in the Brick and Swiss categories at National and World shows.

Michael Hlubek has brings to the Chalet a variety experience in plant operations and quality.  Michael has spent the last 11 years working in the cheese industry with Zimmerman Cheese.

Chalet’s retail store is open to the public Monday thru Friday, 7am to 3pm.  All of Chalet’s finest cheeses are available for purchase along with other local favorites. Stop in and pick up your favorite Baby Swiss or Limburger today!
